Our vineyards
The main trait of this type of grape is its tight clusters of small, thick- skinned berries, with high sugar concentration and an excellent structure. Green pruning and self-limited production further enhance these natural characteristics.
The green harvest and the self-limitation in the quantity will make those natural characteristics stand out even more
The harvest begins between the last days of September and early October, depending on the weather conditions during the year and according to an exhaustive analytic and organoleptic control of the grapes.
Harvesting is done cluster by cluster, always seeking the optimum point of ripeness. The grapes are then transported in small trailers to prevent their accumulated weight from bursting the berries.
At the winery the delicate winemaking process begins, where each state is fermented separately to preserve its unique terroir.
