Barrel room
The second building of the winery is the barrel room, the sancta sanctorum of the winery, with about 1,000 barrels (French and American oak), where occurs the aging and ripening of the wines.
The wood transfers aromatic and tasty substances to the wine and it allows an entry of very small amounts of oxygen to the wine that stabilizes its color.
From time to time, we change the wine, from one barrel to another one to clean the barrel. This process also helps to stabilize the wine.
